Holiday Special: Gluten Free Baking

On November 13th 2013, National Foundation for Celiac Awareness (NFCA) hosted free webinar how to bake gluten free, especially during holidays. And I attended.

This time of the year is generally hard for those with allergies and celiac condition. Families and friends get together and food is the centerpiece of all of those gatherings. It is mainly hard because it is so easy to came across cross contaminated food.

Chef Richard Coppedge, Professor of Baking and Pastry Arts at The Culinary Institute of America and author of Gluten-Free Baking with The Culinary Institute of America introduced (some of newly diagnosed)  or familiarized others with gluten free baking ingredients, like flours and starches. He also thought as some tips to make gluten free baking more easy and safe.

The seminar was educational, but of course 1h is not enough to learn how to bake gluten free. Only through methods of practice and errors we can start making gluten free baking goods. The seminar was though a good start for all of those who are newly diagnosed.

Personally I would like to see more of gluten free/vegan baking, but the general tips and rules I will definitely imlpement in my holiday and everyday gluten free baking.
